From nipaluna/Hobart to Seoul. This fit-out was the first restaurant for its Tasmanian born chef and owner, who became the first chef from the island state to be awarded a Michelin star.
Raw materials are favoured over applied finishes, mirroring the culinary approach of the restaurant—which uses local Korean produce in a pared-back form that emphasis its inherent characteristics.
The fit-out was completed within an existing concrete shell featuring large tapered columns. Much like the food prepared in the open kitchen, the building’s structure and services are left exposed to create a sense of visual engagement with its function.
The restaurant was awarded its first Michelin Star in 2020, followed by a second in 2025.
